Date and nut bars
Ingredients
60g dates
40g dried fruit (raisins, appricots, cranberries)
100g mixed nuts
10g Turmerlicious
For the toppings - choose from
Desicated coconut
Chopped nuts
Cocoa podwer
Turmerlicious
Instructions
Roast the nuts in the oven at 180 until they start to go brown. I use cashews, pecans or mixed shopped nuts (which are cheaper) - this is optional however I feel it makes the nuts taste even better and helps release the oils.
Put all the ingredients in a food processor with you favorite flavour of Turmerlicious
Then blend them until it all sticks together in a ball this can take ages so be patient! In the beginning it will seem crumbly and wont hold together, but then the oils in the nuts are released and bind it all together.
For balls take a desertspoon of the mixture and roll into balls. Coat them with your choice of toppings such as desicated coconut, chopped nuts, Turmerlicious or cocoa powder. Leave to set in the fridge
For bars, put the mixture onto a grease proof sheet on a baking tray and flatten it all out. It helps to put another sheet of greaseproof paper on the top so you can squidge it with your hands without getting sticky.
When it is all flat and about half a cm thick then leave it in the fridge to set for a couple of hours. Then cut into bar sizes.
